Berry-Chocolate Krispie Treats

I’ve had an obsession with berries and chocolate ever since I was a kid and my Mom introduced me to her favorite DQ Bizzard flavor: chocolate covered cherry.  Even though I lean towards chocolate mint or chocolate peanut butter now, chocolate and berries will always have a place in my heart. You can generally find the strawberry marshmallows by Jet-Puffed seasonally during Valentine’s Day at most major grocers. They look like this!

Ingredients Needed

  • Strawberry flavored marshmallows – If you can’t find these cute heart-shaped, strawberry flavored marshmallows, just use regular ol’ marshmallows and add a little strawberry flavoring (either oil or extract, raspberry would be good, too) to taste and a few drops of food coloring if you want the pale pink color. Currently they should be sold at Target, Walmart, Kroger, and other major grocers.
  • Butter – Always use real butter if you can!
  • Almond extract – Almond is a flavor that really pairs well with, and enhances, berry flavors.
  • Rice Krispie Cereal
  • Dried strawberries or mixed berries – When I first developed this recipe years ago, I used dried berries, however now I prefer freeze dried. I love the tartness and the texture! But Either would work.
  • Chocolate chips – I prefer semi-sweet or dark, again to balance the sweetness.
  • Sea Salt or Flake Salt – optional, but recommended for sprinkling on top

How to Make Berry-Chocolate Krispie Treats

  1. Place butter in a pot on the stovetop over medium-low heat. Add marshmallows and stir gently until completely melted.
  2. While marshmallows are melting, place freeze-dried berries a zip top baggie and smash them with your hands until they’re in small pieces. If using dried berries, give them a rough chop. Toss the berries, along with cereal, into a big mixing bowl.
  3. When marshmallows are smooth, add just a bit of almond extract. Pour the marshmallow mixture over the cereal mixture and mix well. Transfer the mixture to a parchment-lined pan and very gently spread out.
  4. Melt chocolate and drizzle over finished rice krispie squares. While chocolate is still wet, crush a few extra berries on top and sprinkle lightly with flaky salt.

Can I make these ahead of time?

Yes. These are great for making a day in advance. For best flavor and texture, serve within 24-48 hours.

Can I double the recipe?

Yes, just make sure you have a large enough bowl to mix everything up! You may want to make two single batches and just combine them in the final pan.

Berry Chocolate Rice Krispie Treats

Gooey rice krispie treats made with strawberry marshmallows and topped with chocolate, flecks of berry, and a sprinkle of sea salt.

Ingredients

  • 1 8-ounce bag strawberry flavored marshmallows or 8oz regular mini marshmallows plus strawberry or raspberry flavoring to taste
  • 3 tablespoons butter
  • ¼ teaspoon almond extract
  • 3 cups Rice Krispie cereal
  • ½ cup freeze-dried strawberries or dried berries
  • ¼-⅓ cup chocolate chips I prefer semi-sweet or dark
  • ½ teaspoon vegetable or coconut oil
  • sea salt

Instructions

  • Lightly butter an 8×8 or slightly larger pan with butter (or line with parchment).
  • Place marshmallows and butter in a pot over medium-low heat. Gently stir until melted and then stir in marshmallows. Stir occasionally until melted and smooth. Remove from heat and stir in almond extract.
  • While marshmallows are melting, place cereal in a large mixing bowl. Put freeze-dried berries in a zip-top bag and gently crush them into small pieces. (If using dried berries, roughly chop.) Add to cereal.
  • Pour melted marshmallow mixture over cereal and quickly stir to combine. Transfer to prepared pan and gently spread out, but don't compact down too hard.
  • Place chocolate and oil in a microwave safe bowl and heat until melted and smooth. Drizzle over treats. Crush a few extra berries on top of the wet chocolate and sprinkle with a little salt. Let sit to set up and then cut into 9 squares.

Notes

  • Store finished Berry-Chocolate Krispie Treats in a single layer in an airtight container at room temperature. Enjoy within days for best results.
  • Yes you can double in a 9×13 pan (that’s what I did in these photos).  They will be slightly thinner.

  2. Wow! Those look great! I love Rice Krispie treats. I had never thought of adding fruit.
    Also, a little hint that I do, instead of buttering your hands to pat down the treats into the pan, just get your hands wet (not dripping obviously), but if they are wet you can pat them in the pan easily and you don’t have to get butter all over them!

  3. You really jazzed them up with the sides dipped in chocolate and then sprinkled. I need more recipes that use sprinkles…because you know how close I live to Gygi’s and I can never get out of there without buying more sprinkles!

  5. My mom always says that Rice Krispy treats are healthy because they’re mostly air. And since these have fruit in them they’re practically a health food staple. With the antioxidants of the chocolate…Yeah, totally healthy. Making them today!

  7. I’m so excited to try this recipe! I LOVE rice krispie treats. People think I’m nuts, but the best ones that I’ve ever had were from Disney World. I at a whole giant Mickey head in a week….by myself. It’s sad, but I don’t regret this; I just wish that I had another one.

    To be clear, I did love the month of healthy posts, and I hope there will be more of them mixed in, but there are times and seasons for everything and Valentine’s Day is a good season for adorable berry rice krispie hearts.

  9. You have the coolest things in the states when it comes to flavors and extracts and shapes. Up here in Canada, we only have regular and the multicoloured marshmallows, no fun shapes or flavors. With marshmallows or anything! No cherry flavored m&m’s (or any other than the original flavors), no variations of much of anything really! I had to get rootbeer extract from the states! And if I want any other fun flavors, I’ll have to get them there too. Including strawberry. Always so jealous of the variety and the prices! My only consolation is that I’m sure I’m saving a TON of money not having the temptation to buy ALl those fun and funky things that I would love to use in th kitchen.

    1. If you have a Bulk Barn near you, a lot of stuff can be found there (extracts etc) otherwise Hobby Lobby or Michaels 🙂

    2. But you have the best chocolate! We drove to PEI last summer and loved seeing all the varieties of Cadbury chocolate.
