Berry Chocolate Rice Krispie Treats

Gooey rice krispie treats made with strawberry marshmallows and topped with chocolate, flecks of berry, and a sprinkle of sea salt.

Ingredients

  • 1 8-ounce bag strawberry flavored marshmallows or 8oz regular mini marshmallows plus strawberry or raspberry flavoring to taste
  • 3 tablespoons butter
  • ¼ teaspoon almond extract
  • 3 cups Rice Krispie cereal
  • ½ cup freeze-dried strawberries or dried berries
  • ¼-⅓ cup chocolate chips I prefer semi-sweet or dark
  • ½ teaspoon vegetable or coconut oil
  • sea salt

Instructions

  • Lightly butter an 8×8 or slightly larger pan with butter (or line with parchment).
  • Place marshmallows and butter in a pot over medium-low heat. Gently stir until melted and then stir in marshmallows. Stir occasionally until melted and smooth. Remove from heat and stir in almond extract.
  • While marshmallows are melting, place cereal in a large mixing bowl. Put freeze-dried berries in a zip-top bag and gently crush them into small pieces. (If using dried berries, roughly chop.) Add to cereal.
  • Pour melted marshmallow mixture over cereal and quickly stir to combine. Transfer to prepared pan and gently spread out, but don't compact down too hard.
  • Place chocolate and oil in a microwave safe bowl and heat until melted and smooth. Drizzle over treats. Crush a few extra berries on top of the wet chocolate and sprinkle with a little salt. Let sit to set up and then cut into 9 squares.

Notes

  • Store finished Berry-Chocolate Krispie Treats in a single layer in an airtight container at room temperature. Enjoy within days for best results.
  • Yes you can double in a 9x13 pan (that's what I did in these photos).  They will be slightly thinner.
