Sara and I have kind of ignored the whole Biscoff craze going on in the rest of the world. It’s not that we don’t like it (well, I can’t speak for Sara, but I know that for me personally, anything that involves my favorite airplane cookies and the word “butter” is going to be something I’m a fan of.) But we just…haven’t. Until now.
As I gear up for Thanksgiving, kind of the biggest, baddest kitchen holiday of of the year, it’s nice to have a few fall-ish recipes handy that aren’t quite so labor-intensive. And if you want to make this easy-peasy Biscoff spread recipe for a snacky appetizer for Thanksgiving morning, you can whip it up a few days ahead of time and then pull it out of the refrigerator (along with some sliced apples) when you’re ready to serve it. Plus, throw in some apples and light cream cheese and a few tablespoons will satisfy your sweet tooth without totally busting your healthy eating. At least that’s what I tell myself.
You’re going to need some Biscoff Cookie Spread (or other spiced cookie spread), 4 ounces of cream cheese (I use light cream cheese), and 1 1/2 teaspoons vanilla extract.

Place the ingredients into a small mixing bowl…

And mix with an electric mixer on high speed for 1-2 minutes or until very light and fluffy. Serve with sliced apples (or other fruit.)
