Quick and Easy Meal Prep Egg Scramble Bowls

You may have seen options similar to this in the fridge or freezer section of your grocery store- all the mix-ins you need for a great egg scramble, minus the eggs. They are a great short cut for a quick breakfast but, let’s face it, stupidly overpriced and full of unnecessary additives. You can make the same thing at home for a fraction of the cost, and with much better ingredients. Stock you freezer with these Quick and Easy Meal Prep Egg Scramble kits, and you can simply whisk a couple of eggs, add the frozen ingredients, and cook up your meal in just a couple of minutes, either in the microwave or on the stove top.

Ingredients Needed

  • Frozen shredded hash brown potatoes – Not cubed, those won’t cook fast enough!
  • Chopped onion – Whatever variety you like.
  • Chopped green pepper – Or whatever color you desire. You can often find these already prepped and frozen on the freezer aisle.
  • Shredded sharp cheddar cheese – This is one of those places where bagged cheese works well. Freshly grated will work, too. Pepper Jack is a delicious choice as well.
  • Meat of choice – Chopped ham, crumbled, cooked sausage, or cooked, crumbled bacon all work great!

How to Make Quick and Easy Meal Prep Egg Scramble Bowls

  1. Combine all ingredients other than eggs in a small freezer-safe container (snack-sized zip-top bags work well). For each one you’ll need frozen hash browns, chopped onions, chopped peppers, shredded cheese, and a meat of your choice. Freeze until ready to use.
  2. To use, crack two eggs in a microwave safe bowl and whisk them up with a sprinkle of salt and pepper. Add the potato/cheese/meat mixture and stir to combine.
  3. Heat in the microwave at 20-30 second increments, stirring each time, until fully cooked, about two minutes. You can also cook in a skillet over medium heat, with a little oil or butter, stirring frequently, until the eggs are cooked through.

Frequently Asked Questions

Can I make these larger?

Absolutely! Larger quantities will simply take a little longer to cook.

Can I store these in the fridge instead of the freezer?

Yes. Just use them within 4 days.

Can I use fresh potatoes?

Not without cooking them first. Fresh potatoes won’t soften fully with the short cooking time.

Can I add other things?

Absolutely. Feel free to add other veggies, such as mushrooms, chopped greens, or anything you like with your eggs, really!

Could I use this mix to make a breakfast burrito?

Sure! Cook it up, wrap in a tortilla, and seal/toast in a skillet over medium heat.

You can make several of these pouches ahead of time and freeze them–when you're ready, just crack a couple of eggs, stir in the contents of the pouches, and cook for a few minutes in the microwave or on the stove!

Ingredients

  • ¼ cup frozen shredded hashbrowns
  • 1 tablespoon chopped onion check the freezer section
  • 1 tablespoon chopped green pepper check the freezer section
  • 2 tablespoons 1 large pinch sharp cheddar cheese
  • 2 tablespoons chopped ham OR crumbled cooked sausage OR 2 slices cooked, crumbled bacon
  • 2 eggs

Instructions

IMMEDIATE INSTRUCTIONS

  • Whisk 2 eggs in a microwave-safe bowl with a pinch of salt and pepper. Add the potato/cheese/meat mixture and stir to combine. Heat in microwave in 20-30 second increments, stirring each time, until fully cooked (mine take about 2 minutes total cooking time) OR cook in a skillet over medium heat, stirring frequently, until the eggs are cooked through. Serve immediately (if you use a microwave, the bowl will be hot).

MAKE AHEAD INSTRUCTIONS:

  • Combine all the ingredients except the eggs in a small freezer-safe container (a snack-sized Ziploc bag works great) and freeze until ready to use.
  • When ready to use, whisk two eggs in a microwave-safe bowl with a pinch of salt and pepper. Add the potato/cheese/meat mixture and stir to combine. Heat in microwave in 20-30 second increments, stirring each time, until fully cooked (mine take about 2 minutes total cooking time) OR cook in a skillet over medium heat, stirring frequently, until the eggs are cooked through. Serve immediately (if you use a microwave, the bowl will be hot).

  • You can make these and store in airtight containers in the fridge as well. Enjoy within 3-4 days for best results.

  6. Can I just say that I love this!! I’m trying to come up with ideas for summer cooking lessons for my 6 and 8 year old, and this is perfect!

    1. Now would be a good time to start saving recipes to a separate file for each of them, too! I made recipe books for my (now young adult) kids when they moved into their college apartments filled with their favorites (with extra detailed instructions). They loved them and still use them.

  7. Fantastic idea! You know those packages of pre-cooked bacon? Could you just chop that up and then let the microwave (good grief do people actually have a problem with using the microwave??!) do the rest of the work when everything is combined?

    1. Yep!! I used precooked bacon (2 slices per bag) when I ran out of ham while I was prepping these!
