You may have seen options similar to this in the fridge or freezer section of your grocery store- all the mix-ins you need for a great egg scramble, minus the eggs. They are a great short cut for a quick breakfast but, let’s face it, stupidly overpriced and full of unnecessary additives. You can make the same thing at home for a fraction of the cost, and with much better ingredients. Stock you freezer with these Quick and Easy Meal Prep Egg Scramble kits, and you can simply whisk a couple of eggs, add the frozen ingredients, and cook up your meal in just a couple of minutes, either in the microwave or on the stove top.

Ingredients Needed
This is just a preview of ingredients and method, keep scrolling for full printable recipe.
- Frozen shredded hash brown potatoes – Not cubed, those won’t cook fast enough!
- Chopped onion – Whatever variety you like.
- Chopped green pepper – Or whatever color you desire. You can often find these already prepped and frozen on the freezer aisle.
- Shredded sharp cheddar cheese – This is one of those places where bagged cheese works well. Freshly grated will work, too. Pepper Jack is a delicious choice as well.
- Meat of choice – Chopped ham, crumbled, cooked sausage, or cooked, crumbled bacon all work great!

How to Make Quick and Easy Meal Prep Egg Scramble Bowls
- Combine all ingredients other than eggs in a small freezer-safe container (snack-sized zip-top bags work well). For each one you’ll need frozen hash browns, chopped onions, chopped peppers, shredded cheese, and a meat of your choice. Freeze until ready to use.
- To use, crack two eggs in a microwave safe bowl and whisk them up with a sprinkle of salt and pepper. Add the potato/cheese/meat mixture and stir to combine.
- Heat in the microwave at 20-30 second increments, stirring each time, until fully cooked, about two minutes. You can also cook in a skillet over medium heat, with a little oil or butter, stirring frequently, until the eggs are cooked through.

Storing and Other Tips
- These are best eaten fresh!
- Store your prepped frozen ingredients in the freezer and use within 2 months for best results.

Questions & Reviews
I may be late to the game, but do you use fabric napkins? I love using mine, but I am crazy and sew my own up with fun fabrics for my kids. Have a nice day.
Gotta try it for breakfast tomorrow! Thank you for sharing!
Ok, have you heard of the boiling method? Super yummy and fun too! Take your baggie of cheese/veggies/meat and place the cracked eggs IN the bag, seal, and mash it around with your hands. Place in a pot of boiling water for 2 minutes. Done! This takes a little more parent involvement and the McJudgers prob won’t jive with eating eggs out of a boiled Ziploc bag, but it’s so fun for camping! Plus… No dishes.
Great idea! I saw those at Walmart and thought they might be good for my kids and now I’m thrilled I can just make them myself!
Brilliant!! I’ve been looking for ways to stock my freezer and get more creative than just oatmeal every morning, so this will be perfect, thank you. Also? I totally laughed out loud at your publicly exploring your feelings comment ?
