Patriotic Dipped Ice Cream Sandwiches

A sweet treat for hot summer days! Store bought ice cream sandwiches are dipped in smooth chocolate, topped with festive sprinkles, and eaten on a stick!

Ingredients

  • 6 Frozen Ice Cream Sandwiches
  • 1 lb Chocolate Melting Wafers or 12oz (2 cups) chocolate chips melted with 2 tablespoons coconut oil
  • 2 tablespoons Colored Sprinkles In desired colors

Instructions

  • Unwrap the ice cream sandwiches and insert a stick into each. Place on a parchment-lined platter or serving tray and freeze until you're ready to dip.
  • Melt the wafers (or chocolate chips and coconut oil) in a double boiler according to the package directions until melted and smooth.
  • Remove the sandwiches from the freezer (you may want to work with just a couple at a time) and quickly dip the ice cream sandwiches in the chocolate, coating on all sides. You may need to drizzle chocolate with a spoon.
  • Sprinkle with red, white, and blue sprinkles and return the pan to the freezer until you're ready to serve them!

Notes

  • The actual number of sandwiches you make, and the amount of chocolate you will need varies depending on a lot of factors (including most important the size of sandwiches you use.  So keep in mind quantities are an approximation.  Feel free to adjust for your needs.
  • It's important to get everything set up and staged before you start so you can move quickly. You're working with warm chocolate and cold ice cream, so there's no time for things to sit around!
  • Keep your ice cream in the freezer and consider working with just a couple at a time so things can stay set.
  • Your chocolate can sit on top of a double boiler while you work, which will keep it nice and melty through the process.
