Pepper Jelly Vinaigrette
A little sweet, a little spicy, a little tangy- the perfect dressing!

- ½ cup pepper jelly
- 2 tablespoons apple cider vinegar preferably Bragg's
- ¾ teaspoon coarse grain mustard or dijon
- ½ teaspoon kosher salt
- a few cracks black pepper
- 1 clove garlic finely minced or pressed
- ½ teaspoon onion powder
- ⅓ cup olive oil or vegetable oil of choice
Optional Salad
- 10 oz fresh spinach
- 1 avocado diced
- 1-2 navel oranges segmented
- thinly sliced red onion to taste
- ½ cup candied walnuts
- ⅓ cup crumbled feta cheese
- grilled steak, shrimp or chicken optional
Place all the ingredients except the oil in the jar of a blender. Blend until smooth.
While the blender is running, add the oil in a steady stream. Allow to stand for at least 1 hour before serving.
