For a higher protein swap, use bone broth in place of the regular broth, and substitute 3/4 cup cottage cheese for the Boursin cheese, more if desired to taste! The more cottage cheese you add, the creamier the soup. I just eyeball it. I also added a small amount of beef bouillon concentrate (better than bouillon) as well, for some added flavor.
